Its peek corn season in New England so I’ve got a WIAW full of Corn from Saturday for you today, so let’s get started.
WIAW full of Corn
I get my WIAW full of corn day started right off the bat with a towering plate of it. Leftover Broccoli Polenta with fresh corn mixed in and topped with tomato sauce. A non-traditional breakfast I know but, I’m sure you have had leftover pizza for breakfast, I mean it’s a college staple am I right? This is similar, just made with lots of corn. Much healthier than a leftover greasy restaurant pie. Plus I was lazy this particular morning and wanted to get outside to take advantage of the extra warm weather we have had.
After breakfast I spent the morning wandering around a corn maze at a local orchard and of course brought back a large sack of fresh Corn. So I put two of them to good use to make Parmesan Garlic Flatbread for lunch.
To cook the corn super quick for this meal I use the microwave. Grilling is my preferred corn cooking method but if you’re looking for a fast, no fuss way to do it here is what I do:
- remove the husk and wrap the corn in a paper towel.
- microwave for 2 minutes per ear on high.
It was bright and sunny with not a cloud in the sky the entire day. So even thought I hadn’t planned on it I had to take advantage of the perfect picture-taking weather. Since I needed to take pictures for Mondays BBQ Chicken Salad Post I made that my Dinner. I love a big as my head salad for dinner. Super Filling and of course chalked full of corn.
Yes, I even had corn for dessert!
After dinner it was still beautiful out so I got myself ahead even further with more pictures. Can I get a little pat on the back for being so productive? I snapped some killer shots of a basil sweet corn ice cream I made a few days earlier then immediately dug in to devour it all.
