Split open a baked sweet potato and top the beautiful, orange creamy flesh with a cinnamon spiked apple pie filling. Top all that sweet goodness with a dollop of tangy high protein greek yogurt. Mouth watering yet? A sprinkle of granola stands in for the traditional crumb topping completing this breakfast sweet potato masterpiece .
This will most likely be breakfast everyday for the foreseeable future!
I grill all year round even in the dead of winter when my grill is covered in snow. So when I was craving burgers for lunch the slight chill in the air didn’t stop me from firing it up. I threw on a pork patty I had meal prepped over the weekend to make a quick runny egg topped burger for lunch.
The past week as been extremely busy for me which means my grocery shopping has fallen by the way side. Poking around my fridge aimlessly for a good 10 minutes (while it angrily beeps at me for leaving the door open) I emerge with a packet of yeast and mozzarella cheese in hand. I know I have flour and pasta sauce in the pantry so homemade Pizza it is. On the Grill again.
Homemade Pizza dough is the perfect solution when your low on food. Its easy and all you need is yeast, flour, sugar, and water. Best part is that it cost about $2 to make a large dough with which you can make pizza, calzones, pretzels, fried dough…….so many possibilities.

Pin Breakfast Sweet Potato with Apple Pie Filling
- Apple pie filling:
- 100 grams apple, diced
- 1 teaspoon swerve
- 1 teaspoon water
- ¼ teaspoon cinnamon
- ¼ teaspoon cornstarch
- For assembly:
- 1 sweet potato, baked
- 113 grams (1/2 cup) non-fat greek yogurt
- 15 grams (2 tablespoons) bear naked protein granola
- For the Apple Pie Filling:
- Combine all apple pie filling ingredients in a microwave save bowl. Cover, leaving a vent for steam. Microwave 2 minutes.
- Split your sweet potato down the middle and push in the sides together to make an opening in the top. Top the potato with the apple pie filling, yogurt and granola.
Want to add more protein? This would be incredible topped with a runny Egg!! Do it.
