Four ingredients and 20 minutes is all you need to have this show stopping Pesto Pasta dinner on the table.
Before I get to this incredibly easy and tasty pesto pasta dinner, I decided to do something I haven’t done yet. I thought it would be fun to share what a full day of eating looks like Looney style. Having a lot more time to cook on the weekends I’m going with what I ate on Sunday, even thought its Wednesday. If your just here for the recipe then just scroll to the bottom of the post. Is anyone else hungrier on days they DON’T exercise?
During the week I wake up early and workout fasted. I never feel hungry on these days. Weekends, however, I don’t exercise first thing and I’m starving with a capital S the moment I wake up! To remedy this I always cook myself a large morning feast. Today it was eggs (that I severely overcooked), bacon and cantaloupe.
Once I start eating, whether its first thing on the weekends or later during the week, my hunger is sparked the rest of the day. As a result I make sure to eat something every 2-3 hours to prevent getting overly hungry at any one point. Therefor Lunch was only a few hours after my breakfast.
I whipped up my Low calorie grilled cheese that I posted a while back. It was perfect for such a rainy miserable day. When are you coming to New England Spring?
Snacks are a must for me! If I wait to long to eat you do not want to be around me. In all reality my so-called “snacks” are more like mini meals, sometimes they are actually more calorie heavy, and typically consist of leftovers from dinner the night before.
Having been recipe testing the day before, I conveniently had a tray of banana baked oatmeal bars sitting on the counter fresh from their blog photo shoot. As a result two of those and a bunch of fruit made for a hearty and satisfying snack.

Whether its Potatoes, bagels, bread, nothing is off-limits to me as long as im consuming them responsibly. Tonight’s carb of choice…… Pasta.
I wanted something quick and easy I could make using ingredients that I had on hand. After rummaging through my pantry and fridge,
Pesto Pasta was what I came up with. Italian flavors for the Win!
- 4 ounces dried pasta of your choice
- ¼ cup pesto
- ½ cup peas
- 4 ounces mozzarella pearls
- Cook your pasta according to the box directions and drain.
- Heat a large skillet over medium heat and add your pesto and peas. Add in your cooked pasta. Toss everything together until the pasta is evenly coated with the pesto and everything is well heated.
- Divide the pasta evenly among two plates and top with the mozzarella pearls. Enjoy!
I always always always end the night with a final snack. Sometimes its sweet, sometimes its savory, but this meal never gets skipped. Ninety percent of the time it ends of being ice cream. This night was no different, ice cream in the form of a very large milkshake. It’s the perfect way to end the day, and I’m convinced it helps me sleep.
