Peas show off their Tex Mex side in a creamy fat-free Pea Guacamole.
Listen to this scenario and tell me if you feel my pain…
I’m hungrily putting the finishing touches on an epic taco themed bowl and it is crying out for a guacamole topping. Reaching into my avocado stash I only find ones that are hard as rocks. What will I do, disappointment starts to creep in.
Are you relating at all? Maybe not, perhaps these types of problems are for Looney foodies like myself only.
Regardless, if you understand my pain or not, I have come up with a solution for times when you need a creamy guacamole topping, but don’t have any ripe Avocados .
Make a Pea Guacamole
Its creamy and green for a start, therefor mimicking guacamoles appearance. In addition the pea purée absorbs all the Tex Mex flavors of lime, cilantro, and hot sauce so you won’t even be able to tell the main ingredient. As an added bonus, its fat-free and low-calorie so you can really load up on your serving size.
Make this Pea Guacamole in under 5 minutes:
You can make this entire recipe in a blender or food processor. I don’t know what I would do without mine. I use it everyday for dips, dressings, smoothies, milkshakes, and shredding veggies.
- 2 cups fresh or frozen peas, thawed and drained
- 1 tablespoon lime juice
- ⅛ teaspoon hot sauce
- ¼ teaspoon salt
- pepper to taste
- ¼ cup cilantro
- ¼ cup scallions, diced
- ½ cup tomato, diced
- Put the peas, lime juice, hot sauce, salt, pepper and cilantro in a blender of food processor. Blend until the peas are smooth and everything is well incorporated.
- Scoop the pea mixture into a bowl and stir in the scallions and tomato. Taste and add more hot sauce if you want it spicier.
1/4 cup (60 grams) cream cheese
1/2 cup ( 113 grams) cottage cheese (my personal favorite)
1/2 cup (113 grams) plain greek yogurt
Enjoy Every Creamy Bite
I use this super flavorful Pea Guacamole anywhere I would us its avocado counterpart. It’s great as a dip, on a salad, a Healthy Turkey Burrito Bowl topper, Healthy Turkey Chili topping, and so much more.
One of my favorite new uses for it is in a Panini! I take nice crusty bread and spread a healthy dose of the Pea guacamole on it. Then I top that with some sweet prosciutto and creamy Gruyère cheese..mmmmmm Once it hits the Panini press and all those flavors come together its heaven. Don’t have a panini press. No big deal, cook your sandwich in a skillet and put a heavy pan on top. Or use one of these nifty things….
I bet Pea Guacamole would be amazing on the super trendy sweet potato toasts I see everywhere!
