These super simple to make Oreo energy balls are easy to grab for when you’re on the go. Not only do they taste like a dessert but they will keep you full for hours! Popping a few in your mouth throughout the day can even get you through 8 hours of shoveling in a blizzard!
“Winter Storm Chris Hammers the Northeast with Blizzard Conditions,
over a foot of snow in six states”
The weather man warned us all week that Chris was coming but the fact that it was 60 degrees the day before didn’t help convince me that this storm was actually coming….
Despite my hatred for the snow I ” brilliantly” started plowing a few years back to make extra money in the winter. So as the first few snowflakes began to fall the reality set in and I knew I better get ready. In addition to all my snow gear I needed two important things: My Oreo energy balls to get through storm Chris, and A PB&J right away! (a classic PB&J on white = happy Looney )
With that in my tummy I whipped up my Oreo energy balls to get me through storm Chris. These are so quick! All you do is blend up a can of chickpeas until they are smooth. Then you add the rest of your ingredients and pulse till it looks like cookie dough. Then, roll those babies into bite sized balls and refrigerate till firm.
- 1 can of chickpeas, drained and rinsed
- ¼ cup of a sugar substitute (I use Truvia)
- ¼ cup of a chocolate hazelnut spread
- ½-3/4 cup of oatmeal flour
- 6 Oreos
- Put your chickpeas in a food processor and blend till smooth
- Add the rest of your ingredients and pulse together till you get a mixture the consistency of cookie dough.
- Start with ½ cup of the oatmeal flour and add more if the mixture is too wet.
- Roll your mixture into balls and set in the fridge to firm up or place in a freezer bag and freeze.
You can easily change the flavor of these by swiping out a few ingredients:
To make a cookie dough flavor simply follow the same steps changing the following:
-replace the chocolate spread with Peanut butter
-omit the oreos
-increase the oatmeal flour to 1-1/2 cups
-Add in mini chocolate chips
While my Oreo energy balls hung out in the fridge I suited up in my snow gear and grabbed my plowing companion. Finally, off we headed for a long day ahead.
After Eight long hours and a crap load of shoveling I stopped back at home for a quick rest and dinner. Beyond having the capability to cook anything to intense I threw together a quick salad. I found some leftover roasted potatoes in the fridge to put in for carbs and needed some protein to make a complete meal. Luckily, eggs are easy and would fit the bill so taking inspiration from my Pork burger the night before I topped my salad with a quick over easy egg to act as both protein and dressing.
