Glancing over my May calendar, I noticed Memorial day is approaching. Here in New England this means the unofficial start of summer. What goes hand in hand with memorial day? Burgers of course . Its time to fire up the grill for the warm weather celebrations.
My mind starts swirling with thoughts of the delicious food that I will be searing and charing on the bbq all summer. These tantalizing thoughts lead me to the realization that my Pork Burger is the only burger recipe I have shared with you! This feels irresponsible of me. So I am taking care of this today with a Jamaican Jerk Chicken Burger.

There are two main components that make up these Jamaican Jerk Chicken Burgers. Chicken and Plantains. Can you tell I like to keep things simple, or maybe Im just lazy and don’t like getting a laundry list of ingredients out of the cupboards.
Lets get right to what makes this mouth-watering burger so incredibly juicy. That would be the ripe plantains. They act as the binding agent. This eliminates the need for moisture zapping breadcrumbs. As a result you get a burger with an extreme juiciness factor as well as a delightful hint of sweetness.
Lean Ground Chicken is the second main element in this recipe. This is the secret to keeping these grilling rock stars super figure friendly.
All these two ingredients need to give them island flavored pizzaz is some spice. Allspice, thyme, and a touch of red pepper do the trick. There you have it. A perfect balance of sweet and savory ready to hit the heat.

- 1 medium plantain
- ¼ cup scallions, chopped
- ½ tablespoon cider vinegar
- 1 teaspoon dried thyme
- ½ teaspoon allspice
- ½ teaspoon salt
- ¼ teaspoon ground red pepper
- 1 pound lean ground chicken
- Prepare gill
- Place plantains in a large bowl and mash with a fork until smooth. Add scallions, vinegar, thyme, allspice, salt, pepper, and chicken. Divide into 4 equal portions, shaping each into a ½ inch thick patty.
- Place the patties on a grill coated with cooking spray and grill 4 minutes on each side. (or until a thermometer reaches 165 degrees)
- Remove and let stand to rest.
- Enjoy on buns, or plain!
Place on a baking sheet coated with cooking spray and bake in a 400 degree oven for 20 minutes.
These Jamaican Jerk Chicken burgers are so flavorful you don’t need a lot of toppings. I do love a cheesy burger, however so I like topping mine with pepper jack cheese, a little lettuce, and tomato.
