My burritos always end up so overstuffed that with one bite the filling comes tumbling out all over the plate. Therefore I hungrily scoop up the delicious contents and push the tortilla to the side. The insides are the best part anyway, who needs the wrapper getting in the way. Rather than wasting my time trying to squish, pack and roll up a burrito I make life easier and have a burrito bowl.
By shedding the caloric tortilla you can double up on the filling!
And double up on the filling you will want to do! It’s equally nutritious as it is delicious. First of all lean ground turkey and black beans provide a good dose of protein without a lot of fat. In addition pre-cooked rice keeps the cooking time to the bare minimum, while adding healthy carbs. If you’re doing the low carb thing, or just don’t want the rice, you could easily swap in cauliflower rice or serve over lettuce. I’ve enjoyed this dish both ways, and I can assure you it tastes great no matter how you serve it!

10 minutes and 5 ingredients for Turkey Burrito Bowls
- 1 pound lean ground turkey
- 1 taco seasoning packet
- 1 can black beans
- 1 can corn
- 1 bag 90 second ready rice, cooked
- toppings of choice:
- salsa, cheese, lettuce, avocado, sour cream
- Cook your turkey and seasoning packet in a skillet over medium heat until the meat is completely cooked through.
- Add in the beans, corn, and rice and mix to combine everything.
- To serve and eat now:
- Serve in bowls with your toppings of choice.
- For meal prep:
- Divide the mixture between 4 containers and store in the fridge until ready to eat. Then top with toppings and enjoy.
