Im busting out the cauliflower rice for another Volume Food dish today. Like my Cauliflower Risotto, the tasty versatile wonder veggie is acting like rice to make a lower carb and calorie salad with a monstrous portion size.

Fresh juicy cherries add a wonderful sweetness to this hearty salad. I like to take advantage of them while they are in season which seems to last all of a few weeks. Crunchy celery, walnuts and creamy blue cheese add deep flavor and a welcome tangy bit. Meaty chickpeas provide a lovely chewy component along with protein to keep you full and fueling those muscles.
I buy fresh heads of cauliflower when they are on sale, blend them into rice and store it in the freezer. This way I always have it on hand, making dishes like this salad something I can throw together in 10 minutes. But even if you don’t have any cauliflower rice made and ready to go this entire meal is still super quick and easy.
In less than 20 minutes you can have a big bowl of Cauliflower Cherry and Walnut Salad on the table. Make it ahead of time and store it in the fridge. The cauliflower soaks up all the flavors and only gets better with time.
Grab a bag of fresh cherries before you blink and they are out of season. Then enjoy massive quantities of Cauliflower Cherry and Walnut salad as a vegetarian main dish or an accompaniment to grilled chicken, meat or fish.
Pin Cauliflower Cherry and Walnut Salad
- 600 grams (5 cups) riced cauliflower
- 300 grams (about 2 cups) fresh pitted cherries
- ½ cup celery, thinly sliced
- 57grams (1/2 cup) walnuts, chopped and toasted
- ¼ cup packed parsley, chopped
- 1 can chickpea, rinsed and drained
- 2 tablespoons fresh lemon juice
- 1 tablespoon dijon mustard
- 1 tablespoon honey
- salt and pepper to taste
- 28 grams (1/4 cup) crumbled blue cheese
- Combine cauliflower rice, cherries, celery, walnuts, parsley and chickpeas in a bowl.
- In a small bowl wish together the lemon juice, mustard, honey, and salt and pepper.
- Pour the dressing over the cauliflower mixture and toss to coat. Top with Blue Cheese

Meal Prep a large batch to pack for lunch throughout the week. It gos great in a bento box along with some grilled chicken and pretzels.
